Tide to Table is ultimately a story about sustainability. At its core, it highlights the journey seafood takes from ocean to plate and the initiatives we can take to improve marine health and conservation in the long run. This is why partnering with producers who emblem the same values was essential. For each dish and its iconic Australian ingredient, we made sure it came from a sustainable source. 

• Native Oysters were farmed from Sydney Rocks and Pacific Tasmania.
• Salmon was bred and nurtured by Ora King in New Zealand's Te Waikoropupū Springs.
• King Prawns were wild-caught off the coast of Eastern Australia. 
• Kingfish was raised in South Australia's Spencer Gulf.
• Barramundi was grown by Humpty Doo in a saltwater wetland system and cleaned using saltwater grasses.
• Chocolate was crafted using ethically farmed cacao sourced through the Cacao Trace program.

There, he met with the team at Cacao Trace, who answer directly to the need for a more sustainable and transparent cocoa supply chain.
